Essence Festival in New Orleans!

I am going on vacation from June 29 to July 6 to New Orleans, LA for the 15 year anniversary of the Essence Festival. I will resume taking cake orders when I return!

Crawfish Boil Cake


This is a four-layer cake wrapped in gray fondant to resemble a pot of boiling crawfish trying to escape! First, I covered a 12"x12" cake board with alternating red and white squares to resemble a tablecloth then placed the stacked cakes on it. Then, I covered an 8" cardboard circle to make the lid. The crawfish are made with red fondant. This cake was the centerpiece of the party!

Gumpaste Flowers





I did it! I completed the last module of the Master Cake Decorating Certification! I learned SO much! I am looking forward to expanding my knowledge in this field by taking more classes in advanced techniques in the months and years to come!

This week we focused on making flowers with gumpaste, a sugar dough which dries very quickly. After is hardens completely, the flowers can be colored with petal dusts to create the shadowing and life-like appearance.

This picture shows a few varieties that we learned how to make: roes, daisies, ivy vine, cattleya Orchid, Calla Lily, Casa Blanca Lily, Dahlia, winter roses, Carnation, Cherry Blossom, Freesia, sweet pea flower, stephanotis and pine cones made with chocolate fondant!

Romantic Husband



I received a call early this week from a husband who wanted to surprise his wife with a birthday cake. Her name is Andrea and she likes the flower named "Anthurium Andreanum". The plan was to drop her off to have lunch with her friends then meet me to pick up the cake then bring it back to the restaurant.

Well, I had never heard of this flower before so, thank God for Google...I found an image and created the flower using gumpaste so she can save them as a souvenir!

Willowridge HS Graduation


This is a 2-layer 1/2 sheet marble cake. A childhood friend's daughter graduated from Willowridge High School in Missouri City, TX. Congratulations Symone!

Zebra Print Graduation Cake



This full sheet cake was a bit of a challenge because the client originally wanted an edible image of the picture on the cake but the mural was 12"x12" and the local edible image shops were only capable of scanning on 8"x11" sheets. So, I called the client and got the OK to laminate the picture but I was informed at the lamination place that the the rhinestones around the pictures would create air bubbles in the lamination. I had to really get my creative juices going and then it clicked...I'll just tape the picture to a 12"x12" cardboard and shrink wrap the picture! It worked! Check out the results!
