Spongebob Cake


I did this cake for very good friend's daughter. This Spongebob cake is a 3/4 sheet yellow cake that I carved to resemble Spongebob. Then I covered the entire cake with #18 star tip.

Days 4&5: The Finale




I have completed the first of three modules! Here are the three dummy cakes (styrofoam covered in rolled fondant) that I created.

Cake 1: This is the cake that I started on day 2. The color flow collars on the top and base of the cake took 2 days to completely dry. I piped flower embroidery along the sides of the cake.

Cake 2: This cake combines the royal icing roses and leaves that we did on day 1 and piping string work that we learned on day 3.

Cake 3: On days 4 & 5 we learned how to make butterflies using gumpaste. We also piped lattice designs with royal icing and we learned brushed embroidery which is seen on the top of the cake. I crimped the fondant along the top edge of the cake with tiny hearts.

Day 3: Postponed!

Due to extreme flooding in some parts of Houston, many students were not able to make it to class today so we will continue tomorrow. Today, I plan on doing some research for my business plan.

Day 2: PME Professional Course

We did very detailed work today...we created "collars" for the top and base of our cake using a pattern and royal icing. I piped a lattice design with royal icing then thinned the royal icing with water to create the color flow. I filled in the design with the color flow to create a smooth "plaque" which will dry completely in about 2 days. I will post my completed cake in a couple of days after my design dries!

Day 1: PME Professional Diploma Course

Today was the first day of the "Royal Icing & Piping Module". There are 10 students in my class (including me!). We reviewed some basic skills like icing a smooth cake with butter cream frosting, piping straight lines, control when writing on a cake, making roses, sweet peas, daisies, chrysanthemums, leaves, shell borders, etc. Nothing too exciting.

The day before Class





This morning, I woke up at 7am to complete the ladybug cake I baked last night. I baked a full sheet cake and carved it into the shape of the ladybug's body. I baked one half of the sports ball pan to use as her face. I covered the entire cake with #18 tip stars then used uncooked spaghetti with a marshmellow on top for the antenna. I covered the spagetti and marshmellow with black buttercream icing.

The first day of the rest of my life!

Today was my last official day as an electrical engineer and my first day as a cake designer! Last night, I baked a tres leches cake with stawberry filling and a butter pound cake. I delivered the butter pound cake to a customer on my way to work this morning and the other customer picked up the the tres leches cake when I got home. NO MORE JUGGLING ACT! Just about every weekend last year was crazy...trying to balance working, baking, decorating, delivering, sleeping!

Tonight, I have to bake a full sheet cake shaped like a ladybug to deliver at 11am tomorrow morning. I plan to wake up at 7am to have it completed by 9am.

Almost out of the "Rat Race"

Call me crazy but I put in my two week notice on Monday, April 13 2009 from a pretty good position as an Electrical Design Engineer in the mist of an economic recession in order to pursue my dream of becoming one of the most sought after Cake Designers in the greater Houston area!

My last official day is April 24 then on April 26, I will attend day 1 of the first out of three modules I must complete in order to earn a Masters Certificate in Cake Decorating. Each module is 25 hours and will include hands on decorating techniques and business essentials and requirements.

I am looking forward to opening this new chapter in my life and documenting this journey! I want to thank my husband for his support and my children for their encouragement. They are my #1 fans and I thank God for them! Stay tuned!
